Ingredients: 300g Bomba rice, 1 White onion (finely diced), 50g Butter, 1 tsp Saffron, 1 tsp White pepper, 1 tsp Turmeric, 150ml Dry White Wine, 1L Veg stock, 1 Lemon (zested)...

Ingredients

  • 300g Bomba rice
  • 1 White onion (finely diced)
  • 50g Butter
  • 1 tsp Saffron
  • 1 tsp White pepper
  • 1 tsp Turmeric
  • 150ml Dry White Wine
  • 1L Veg stock
  • 1 Lemon (zested)

Cooking Method

  1. The Architect Sauté onion in half the butter until translucent and sweet.
  2. The Scorch Add the rice; toast for 2 minutes until the edges are clear.
  3. The Bloom Add saffron, pepper, and lemon zest with a 50ml splash of stock; stir until the fragrance releases.
  4. The Swell Pour in the wine; simmer until absorbed. Add remaining stock one ladle at a time, stirring constantly.
  5. The Final Flourish Stir in remaining butter, raw manchego, and a massive hit of fresh raw mint.
