Ingredients: 2 Salmon fillets, 30g Fresh ginger (grated), 1 Shallot (minced), 1 tsp White pepper, 1 tsp Salt, 100ml Double cream, 100g Fresh Spinach (minced), 1 Lemon (juiced)...

Ingredients

  • 2 Salmon fillets
  • 30g Fresh ginger (grated)
  • 1 Shallot (minced)
  • 1 tsp White pepper
  • 1 tsp Salt
  • 100ml Double cream
  • 100g Fresh Spinach (minced)
  • 1 Lemon (juiced)

Cooking Method

  1. The Scorch Sear salmon in oil until charred and golden; remove.
  2. The Architect Sauté shallots and ginger in 20g butter until soft.
  3. The Bloom Add the spices and a 20ml splash of lemon juice; the sizzle will release the ginger aromatics.
  4. The Silk Merge Add spinach and cream; simmer for 3 minutes until the greens wilt into a thick emerald silk.
  5. The Marriage Return the salmon for 1 minute to lacquer in the green fire.
  6. The Final Flourish Finish with raw lemon zest and extra fresh pepper.
