THE ZESTY GINGER BIRD
(Our Play on Greek Kotopoulo with a Sharp Sting)
Ingredients: 4 Chicken thighs (bone-in), 30g Fresh ginger (grated), 4 cloves Garlic (minced), 1 tbsp Dried Oregano, 1 tsp Turmeric, 1 tsp Black pepper, 100ml Lemon juice, 50ml Chicken stock, 50g Butter...
Ingredients
- 4 Chicken thighs (bone-in)
- 30g Fresh ginger (grated)
- 4 cloves Garlic (minced)
- 1 tbsp Dried Oregano
- 1 tsp Turmeric
- 1 tsp Black pepper
- 100ml Lemon juice
- 50ml Chicken stock
- 50g Butter
Cooking Method
- The Scorch Fry chicken in oil until the skin is rock-hard and charred; remove.
- The Architect Sauté ginger and garlic in butter until fragrant.
- The Bloom Add spices with a 30ml splash of lemon juice; the sudden steam will release the ginger sting.
- The Swell Add remaining stock and juice; return chicken. Simmer covered for 15 minutes.
- The Marriage Remove lid; boil until the liquid reduces to a thick yellow silk.
- The Final Flourish Top with raw fresh parsley matchsticks and extra lemon zest.
