Ingredients

  • 400g Sweetcorn (fresh or canned)
  • 1 Red onion (minced)
  • 1 Red pepper (diced)
  • 1 Jalapeño
  • 1 tsp Cumin
  • 1 tsp Salt
  • 0.5 tsp Chili powder
  • 2 Limes (juiced)
  • 1 tbsp Olive oil

Cooking Method

  1. The Scorch Fry corn in a dry pan on max heat until charred and popping; let cool.
  2. The Bloom Whisk lime juice, oil, and spices with a tiny 10ml splash of water; the moisture will swell the cumin.
  3. The Marriage Toss the corn and veg in the spiced silk until fully coated.
  4. The Final Flourish Top with a massive hit of raw fresh coriander matchsticks.
