Ingredients: 300g Basmati or Long-grain rice, 1 small onion (minced), 1 clove Garlic, 600ml Chicken stock, 2 tbsp Butter, 2 Limes (juiced and zested), Handful of fresh Coriander...

Ingredients

  • 300g Basmati or Long-grain rice
  • 1 small onion (minced)
  • 1 clove Garlic
  • 600ml Chicken stock
  • 2 tbsp Butter
  • 2 Limes (juiced and zested)
  • Handful of fresh Coriander

Cooking Method

  1. The Architect Sauté the minced onion in butter until translucent and sweet.
  2. The Scorch Add the rice; toast for 2 minutes until the edges are see-through.
  3. The Bloom Add a tiny 20ml splash of stock to 'hiss' the rice before pouring in the rest of the liquid.
  4. The Swell Simmer covered for 12 minutes until the stock is absorbed and grains are fluffy.
  5. The Final Flourish Fold in the lime juice, zest, and raw coriander matchsticks immediately before serving.
