(Our Play on Lime Cilantro Rice)

Ingredients
- 300g Basmati or Long-grain rice
- 1 small onion (minced)
- 1 clove Garlic
- 600ml Chicken stock
- 2 tbsp Butter
- 2 Limes (juiced and zested)
- Handful of fresh Coriander
Cooking Method
- The Architect Sauté the minced onion in butter until translucent and sweet.
- The Scorch Add the rice; toast for 2 minutes until the edges are see-through.
- The Bloom Add a tiny 20ml splash of stock to 'hiss' the rice before pouring in the rest of the liquid.
- The Swell Simmer covered for 12 minutes until the stock is absorbed and grains are fluffy.
- The Final Flourish Fold in the lime juice, zest, and raw coriander matchsticks immediately before serving.
