Ingredients

  • 400g Nopal (Cactus pads, diced) or Green beans
  • 1 Red onion (minced)
  • 2 Tomatoes (diced)
  • 1 tsp Cumin
  • 1 tsp Salt
  • 0.5 tsp Chili flakes
  • 2 Limes (juiced)
  • 2 tbsp Olive oil

Cooking Method

  1. The Scorch Boil cactus in salted water for 5 minutes; drain and rinse until no longer tacky.
  2. The Bloom Whisk lime juice and spices with a tiny 10ml splash of water; the acid will release the spice oils.
  3. The Marriage Toss the cactus, onion, and tomatoes in the spiced lime silk.
  4. The Final Flourish Top with crumbled feta and a massive hit of raw fresh coriander.
