Ingredients: 600g Beef and Lamb mince mix, 4 cloves Garlic (minced to a paste), 1 tsp Baking soda, 1 tsp Black pepper, 1 tsp Salt, 20g Fresh ginger (grated), 50ml Sparkling water...

  • 600g Beef and Lamb mince mix
  • 4 cloves Garlic (minced to a paste)
  • 1 tsp Baking soda
  • 1 tsp Black pepper
  • 1 tsp Salt
  • 20g Fresh ginger (grated)
  • 50ml Sparkling water

Cooking Method

  1. The Build Knead the meat with garlic, baking soda, and spices.
  2. The Bloom Slowly pour the sparkling water and ginger over the meat; the bubbles will carry the ginger sting into the fibers.
  3. The Rest Chill for 4 hours to let the architecture set.
  4. The Scorch Form into small cylinders; grill on white-hot heat for 2 minutes per side until charred and rock-hard outside.
  5. The Final Flourish Serve with raw onion rings and a massive dollop of Ajvar.
