- 50ml Sparkling water
Cooking Method
- The Build Knead the meat with garlic, baking soda, and spices.
- The Bloom Slowly pour the sparkling water and ginger over the meat; the bubbles will carry the ginger sting into the fibers.
- The Rest Chill for 4 hours to let the architecture set.
- The Scorch Form into small cylinders; grill on white-hot heat for 2 minutes per side until charred and rock-hard outside.
- The Final Flourish Serve with raw onion rings and a massive dollop of Ajvar.
