THE ZA'ATAR ROOTS
(Our Play on Roasted Potatoes with Lebanese Thyme)
Ingredients: 1kg Potatoes (cubed), 2 tbsp Za'atar, 1 tsp Chili flakes, 1 tsp Salt, 60ml Olive oil, 2 tbsp Lemon juice, 4 cloves Garlic (smashed)...

- 1kg Potatoes (cubed)
- 2 tbsp Za'atar
- 1 tsp Chili flakes
- 1 tsp Salt
- 60ml Olive oil
- 2 tbsp Lemon juice
- 4 cloves Garlic (smashed)
Cooking Method
- The Boil Par-boil potatoes for 8 minutes; drain and shake to roughen the architecture.
- The Bloom Whisk oil, za'atar, and spices with a tiny 10ml splash of water to bloom the herbal oils.
- The Scorch Toss potatoes with the spiced oil; roast at 220°C for 25 minutes until rock-hard charred.
- The Final Flourish Drizzle with raw lemon juice and a final dust of raw za'atar.
