THE ZA'ATAR REEF ORBS
(Our Play on Mititei with a Levantine Heart)
Ingredients: 600g Beef and Lamb mince mix, 2 tbsp Za'atar, 1 tsp Chili flakes, 1 tsp Salt, 4 cloves Garlic (pureed), 1 tsp Baking soda, 50ml Cold Sparkling water, 1 tbsp Tahini...
Ingredients
- 600g Beef and Lamb mince mix
- 2 tbsp Za'atar
- 1 tsp Chili flakes
- 1 tsp Salt
- 4 cloves Garlic (pureed)
- 1 tsp Baking soda
- 50ml Cold Sparkling water
- 1 tbsp Tahini
Cooking Method
- The Build Knead meat with garlic, baking soda, and half the za'atar until tacky.
- The Bloom Slowly fold in sparkling water and tahini; the bubbles will release the herbal oils into the meat.
- The Rest Chill for 6 hours.
- The Scorch Form small cylinders; grill on white-hot heat until rock-hard charred.
- The Final Flourish Roll the hot orbs in the remaining raw za'atar; serve with raw lemon.
