THE ZA'ATAR CHEESE-DISK
(Our Play on Banitsa with a Middle Eastern Heart)
Ingredients: 10 sheets Phyllo pastry, 100g Butter (melted), 300g Feta, 200g Yogurt, 2 Eggs, 2 tbsp Za'atar, 1 tsp Chili flakes, 2 tbsp Honey, Sesame seeds...

- 10 sheets Phyllo pastry
- 100g Butter (melted)
- 300g Feta
- 200g Yogurt
- 2 Eggs
- 2 tbsp Za'atar
- 1 tsp Chili flakes
- 2 tbsp Honey
- Sesame seeds
Cooking Method
- The Bloom Whisk za'atar and chili into the eggs and yogurt with a 10ml splash of warm milk to release the herbal oils.
- The Silk Merge Fold in the Feta until it forms a chunky, aromatic green-yellow silk.
- The Shape Roll the silk in phyllo snakes; coil into a pan.
- The Bake Roast at 200°C for 30 minutes until rock-hard golden charred.
- The Final Flourish Brush with raw honey while hot; top with extra raw za'atar.
