(Our Play on Spanish Mussels with Garlic & Herbs)

- 1kg Fresh Mussels
- 6 cloves Garlic (minced)
- 50ml Olive oil
- 1 tsp Black pepper
- 1 tsp Salt
- 150ml Dry White Wine
- Fresh Parsley
Cooking Method
- The Architect Sauté garlic in olive oil until golden and fragrant.
- The Bloom Add pepper and salt with a 20ml splash of water to form a sharp aromatic steam.
- The Swell Pour in the wine; bring to a rolling boil for 1 minute.
- The Marriage Add the mussels; cover tightly and cook for 5 minutes until all have opened.
- The Final Flourish Top with a massive amount of raw fresh parsley and serve with lemon.
