- 500g Fresh Clams (cleaned)
- 4 cloves Garlic (finely sliced)
- 100ml White wine
- 1 tsp Chili flakes
- 1 tsp Salt
- 50ml Extra virgin olive oil
- Fresh Parsley
Cooking Method
- The Architect Gently heat the oil and garlic until the garlic is pale golden and fragrant.
- The Bloom Add chili flakes and a tiny 15ml splash of water to form a spicy emulsion.
- The Swell Pour in the wine; bring to a rolling boil for 1 minute.
- The Marriage Add the clams; cover tightly and cook for 5 minutes until all shells have opened.
- The Final Flourish Toss with cooked spaghetti and a massive hit of raw fresh parsley.
