THE WHITE-WINE CLAM-MIST

Ingredients
- 1kg Fresh Clams (cleaned)
- 4 cloves Garlic (minced)
- 1 small onion (pureed)
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 150ml Dry white wine
- 1 tbsp Flour
Cooking Method
- The Architect Sauté onion and garlic in 2 tbsp oil until soft.
- The Bloom Add paprika, pepper, and flour with a 30ml splash of wine; fry for 1 minute to form a thick smoky paste.
- The Swell Pour in remaining wine; bring to a rolling boil.
- The Marriage Add clams; cover tightly and cook for 5 minutes until all have opened.
- The Final Flourish Top with a massive hit of raw fresh parsley and serve with charred bread.
