Ingredients

  • 1kg Fresh Clams (cleaned)
  • 4 cloves Garlic (minced)
  • 1 small onion (pureed)
  • 1 tsp Smoked paprika
  • 1 tsp Black pepper
  • 150ml Dry white wine
  • 1 tbsp Flour

Cooking Method

  1. The Architect Sauté onion and garlic in 2 tbsp oil until soft.
  2. The Bloom Add paprika, pepper, and flour with a 30ml splash of wine; fry for 1 minute to form a thick smoky paste.
  3. The Swell Pour in remaining wine; bring to a rolling boil.
  4. The Marriage Add clams; cover tightly and cook for 5 minutes until all have opened.
  5. The Final Flourish Top with a massive hit of raw fresh parsley and serve with charred bread.
