THE WHITE-SILK VEAL

- 500g Veal or Chicken (cubed)
- 1 Onion (pureed)
- 200g Mushrooms
- 1 tsp White pepper
- 0.5 tsp Nutmeg
- 1 tsp Salt
- 200ml Double cream
- 1 Egg yolk
- 300ml Chicken stock
Cooking Method
- The Architect Fry onion puree and mushrooms in butter until soft.
- The Bloom Add spices with a 40ml splash of stock; the heat will swell the nutmeg oils.
- The Swell Add remaining stock and meat; simmer for 20 minutes until tender.
- The Silk Merge Whisk cream and egg yolk in a bowl; slowly stir into the pot off the heat until it forms a thick white silk.
- The Final Flourish Top with raw fresh parsley and lemon juice.
