THE WHITE-SILK FUNGAL BOWL

Ingredients: 400g Button mushrooms (finely minced), 200g Feta (crumbled), 100ml Greek Yogurt, 50g Butter, 1 tsp White pepper, 1 tsp Smoked paprika, 1 tsp Dried Dill, 2 cloves Garlic (pureed), 1 Shallot (minced)...

Ingredients

  • 400g Button mushrooms (finely minced)
  • 200g Feta (crumbled)
  • 100ml Greek Yogurt
  • 50g Butter
  • 1 tsp White pepper
  • 1 tsp Smoked paprika
  • 1 tsp Dried Dill
  • 2 cloves Garlic (pureed)
  • 1 Shallot (minced)

Cooking Method

  1. The Scorch Fry mushrooms and shallots in butter on maximum heat until every drop of moisture is gone and the fungal architecture is charred.
  2. The Bloom Add garlic and spices to the hot pan with a tiny 15ml splash of water; the hiss will release the allicin and dill perfume.
  3. The Silk Merge Lower heat; stir in the yogurt and feta until the cheese vanishes into a thick, chunky white silk.
  4. The Final Flourish Top with raw fresh dill matchsticks and a dusting of raw paprika.
