THE WHITE-SILK FUNGAL BOWL
(Our Play on Bulgarian Mushroom & Feta Dip)
Ingredients: 400g Button mushrooms (finely minced), 200g Feta (crumbled), 100ml Greek Yogurt, 50g Butter, 1 tsp White pepper, 1 tsp Smoked paprika, 1 tsp Dried Dill, 2 cloves Garlic (pureed), 1 Shallot (minced)...
Ingredients
- 400g Button mushrooms (finely minced)
- 200g Feta (crumbled)
- 100ml Greek Yogurt
- 50g Butter
- 1 tsp White pepper
- 1 tsp Smoked paprika
- 1 tsp Dried Dill
- 2 cloves Garlic (pureed)
- 1 Shallot (minced)
Cooking Method
- The Scorch Fry mushrooms and shallots in butter on maximum heat until every drop of moisture is gone and the fungal architecture is charred.
- The Bloom Add garlic and spices to the hot pan with a tiny 15ml splash of water; the hiss will release the allicin and dill perfume.
- The Silk Merge Lower heat; stir in the yogurt and feta until the cheese vanishes into a thick, chunky white silk.
- The Final Flourish Top with raw fresh dill matchsticks and a dusting of raw paprika.
