(Our Play on Clams with Garlic and Lemon)

- 1kg Fresh Clams
- 6 cloves Garlic (finely sliced)
- 50ml Olive oil
- 1 tsp Black pepper
- 1 tsp Salt
- 100ml Dry White Wine
- 1 Lemon (juiced)
Cooking Method
- The Architect Heat oil and garlic until it starts to turn a pale gold.
- The Bloom Add pepper and salt with a 30ml splash of wine; the steam will release the piquant allicin.
- The Swell Pour in remaining wine; bring to a rolling boil.
- The Marriage Add clams; cover tightly and cook for 5 minutes until all have opened.
- The Final Flourish Stir in massive amounts of fresh raw parsley and lemon juice.
