(Our Play on Chicken with Sherry & Olives)

Ingredients
- 500g Chicken thighs (bone-in)
- 2 cloves Garlic (sliced)
- 2 Red onions (petals)
- 2 tsp Dried Rosemary
- 1 tsp Black pepper
- 200ml Dry Sherry
- 100g Green olives
Cooking Method
- The Scorch Fry chicken skin-side down until the fat renders and skin is crispy; remove.
- The Architect Sauté onions and garlic in the fat until golden.
- The Bloom Add rosemary and pepper with a 30ml splash of sherry to form a fragrant mist.
- The Swell Add remaining sherry and olives; return chicken and simmer for 20 minutes.
- The Final Flourish Finish with a squeeze of lemon and raw rosemary sprigs.
