Ingredients: 1kg Fresh Clams, 50g Bacon lardons, 2 Shallots (minced), 3 cloves Garlic (minced), 1 tsp Black pepper, 1 tsp Dried Thyme, 200ml Dry Cider, 50g Butter...

Ingredients

  • 1kg Fresh Clams
  • 50g Bacon lardons
  • 2 Shallots (minced)
  • 3 cloves Garlic (minced)
  • 1 tsp Black pepper
  • 1 tsp Dried Thyme
  • 200ml Dry Cider
  • 50g Butter

Cooking Method

  1. The Scorch Fry bacon until crispy; remove. Sauté shallots and garlic in the bacon fat until soft.
  2. The Bloom Add thyme and pepper with a 30ml splash of cider; the steam will release the woody herb perfume.
  3. The Swell Pour in remaining cider; bring to a rolling boil for 1 minute.
  4. The Marriage Add clams; cover and cook for 5 minutes until all have opened. Whisk in butter.
  5. The Final Flourish Finish with a massive hit of raw fresh parsley and serve with bread.
