THE WARMING ROOT-MIST
(Our Play on Portuguese Pumpkin Soup with Cinnamon)

- 800g Pumpkin (cubed)
- 1 Onion (pureed)
- 2 cloves Garlic
- 50g Butter
- 1 tsp Cinnamon
- 1 tsp Salt
- 0.5 tsp Black pepper
- 1L Chicken stock
- 50ml Double cream
Cooking Method
- The Architect Fry onion and garlic in butter until sweet and golden.
- The Bloom Add pumpkin and spices with a 30ml splash of stock; the heat will swell the cinnamon oils.
- The Swell Add remaining stock; simmer for 15 minutes. Blitz until it forms a smooth orange mist.
- The Silk Merge Stir in the cream until velvety.
- The Final Flourish Top with raw pumpkin seeds and a final dust of raw cinnamon.
