THE WALNUT-SILK PULSE
(Our Play on Bulgarian Lentil Soup with Nutty Architecture)

Ingredients
- 300g Green Lentils
- 150g Walnuts (ground)
- 2 cloves Garlic (pureed)
- 1 tsp Smoked paprika
- 1 tsp Cumin
- 1 tsp Black pepper
- 1L Veg stock
- 2 tbsp Vinegar
- 2 tbsp Olive oil
Cooking Method
- The Architect Fry onion and garlic in oil until sweet; add half the ground walnuts.
- The Bloom Add spices with a 30ml splash of stock; the heat will release the smoky oils into the nuts.
- The Swell Add lentils and remaining stock; simmer for 25 minutes until tender.
- The Silk Merge Stir in remaining walnuts and vinegar off the heat until it forms a thick, earthy white-grey silk.
- The Final Flourish Top with raw fresh parsley matchsticks and extra raw walnuts.
