THE WALNUT-SILK GREENS
(Our Play on Spinach with Walnut Sauce)

- 500g Fresh Spinach
- 150g Walnuts (ground)
- 2 cloves Garlic (minced)
- 1 tsp White pepper
- 0.5 tsp Nutmeg
- 100ml Double cream
- 50g Butter
Cooking Method
- The Wilt Blanch spinach for 30 seconds; squeeze dry and chop.
- The Architect Melt butter and sauté garlic until golden; add ground walnuts.
- The Bloom Add spices with a tiny 15ml splash of cream; the heat will swell the nutmeg oils.
- The Silk Merge Stir in remaining cream; simmer for 1 minute until it forms a thick nutty silk.
- The Marriage Toss the spinach in the walnut-silk until coated.
- The Final Flourish Top with raw pomegranate seeds and extra raw walnuts.
