Ingredients: 500g Fresh Spinach, 150g Walnuts (ground), 2 cloves Garlic (minced), 1 tsp White pepper, 0.5 tsp Nutmeg, 100ml Double cream, 50g Butter...

Ingredients

  • 500g Fresh Spinach
  • 150g Walnuts (ground)
  • 2 cloves Garlic (minced)
  • 1 tsp White pepper
  • 0.5 tsp Nutmeg
  • 100ml Double cream
  • 50g Butter

Cooking Method

  1. The Wilt Blanch spinach for 30 seconds; squeeze dry and chop.
  2. The Architect Melt butter and sauté garlic until golden; add ground walnuts.
  3. The Bloom Add spices with a tiny 15ml splash of cream; the heat will swell the nutmeg oils.
  4. The Silk Merge Stir in remaining cream; simmer for 1 minute until it forms a thick nutty silk.
  5. The Marriage Toss the spinach in the walnut-silk until coated.
  6. The Final Flourish Top with raw pomegranate seeds and extra raw walnuts.
