THE WALNUT-HONEY CRUST

Ingredients: 300g Walnuts (ground), 200g Sugar, 4 Eggs, 1 tsp Cinnamon, 0.5 tsp Cloves, 1 tsp Vanilla, 100ml Honey, 50ml Water, 1 Lemon (juiced)...

Ingredients

  • 300g Walnuts (ground)
  • 200g Sugar
  • 4 Eggs
  • 1 tsp Cinnamon
  • 0.5 tsp Cloves
  • 1 tsp Vanilla
  • 100ml Honey
  • 50ml Water
  • 1 Lemon (juiced)

Cooking Method

  1. The Build Whisk eggs and sugar until pale; fold in walnuts and spices.
  2. The Bloom Add vanilla and a tiny 10ml splash of warm milk to the batter to bloom the cinnamon.
  3. The Bake Pour into a tray; roast at 180°C for 35 minutes until the top is charred golden.
  4. The Swell Boil honey, water, and lemon juice into a syrup.
  5. The Marriage Pour the hot syrup over the cold cake; it will absorb the liquid into a dense nutty silk.
  6. The Final Flourish Top with raw crushed walnuts and orange zest.
