THE WALNUT-HONEY CRUST
(Our Play on Balkan Walnut Cake)
Ingredients: 300g Walnuts (ground), 200g Sugar, 4 Eggs, 1 tsp Cinnamon, 0.5 tsp Cloves, 1 tsp Vanilla, 100ml Honey, 50ml Water, 1 Lemon (juiced)...

- 100ml Honey

Cooking Method
- The Build Whisk eggs and sugar until pale; fold in walnuts and spices.
- The Bloom Add vanilla and a tiny 10ml splash of warm milk to the batter to bloom the cinnamon.
- The Bake Pour into a tray; roast at 180°C for 35 minutes until the top is charred golden.
- The Swell Boil honey, water, and lemon juice into a syrup.
- The Marriage Pour the hot syrup over the cold cake; it will absorb the liquid into a dense nutty silk.
- The Final Flourish Top with raw crushed walnuts and orange zest.
