THE WALNUT-CHEESE FOLD
(Our Play on Borek with a Gorgonzola Twist)

- 100g Butter (melted)
- 200g Feta (crumbled)
- 100g Gorgonzola (crumbled)
- 2 Eggs
- 100g Walnuts (ground)
- 1 tsp Black pepper
- 0.5 tsp Nutmeg
Cooking Method
- The Bloom Whisk eggs and spices with a tiny 10ml splash of warm milk to release the woody nutmeg.
- The Silk Merge Fold in the cheeses and ground walnuts until it forms a thick, blue-speckled silk.
- The Build Layer phyllo with butter; fill with the walnut-cheese silk and roll into snakes.
- The Bake Roast at 200°C for 30 minutes until the top is rock-hard golden charred.
- The Final Flourish Brush with raw honey while hot and top with extra raw walnuts.
