Ingredients: 500g Phyllo pastry, 100g Butter (melted), 200g Feta (crumbled), 100g Gorgonzola (crumbled), 2 Eggs, 100g Walnuts (ground), 1 tsp Black pepper, 0.5 tsp Nutmeg...

Ingredients

  • 500g Phyllo pastry
  • 100g Butter (melted)
  • 200g Feta (crumbled)
  • 100g Gorgonzola (crumbled)
  • 2 Eggs
  • 100g Walnuts (ground)
  • 1 tsp Black pepper
  • 0.5 tsp Nutmeg

Cooking Method

  1. The Bloom Whisk eggs and spices with a tiny 10ml splash of warm milk to release the woody nutmeg.
  2. The Silk Merge Fold in the cheeses and ground walnuts until it forms a thick, blue-speckled silk.
  3. The Build Layer phyllo with butter; fill with the walnut-cheese silk and roll into snakes.
  4. The Bake Roast at 200°C for 30 minutes until the top is rock-hard golden charred.
  5. The Final Flourish Brush with raw honey while hot and top with extra raw walnuts.
