Ingredients: 4 Chicken breasts (pounded thin), 150g Walnuts (finely ground), 2 cloves Garlic (minced), 1 tsp Smoked paprika, 1 tsp White pepper, 1 tsp Salt, 100ml Chicken stock, 50ml Double cream, 50g Butter...

Ingredients

  • 4 Chicken breasts (pounded thin)
  • 150g Walnuts (finely ground)
  • 2 cloves Garlic (minced)
  • 1 tsp Smoked paprika
  • 1 tsp White pepper
  • 1 tsp Salt
  • 100ml Chicken stock
  • 50ml Double cream
  • 50g Butter

Cooking Method

  1. The Scorch Fry chicken in butter on high heat until charred and golden; remove.
  2. The Architect Add garlic and ground walnuts to the pan; fry until nutty and golden.
  3. The Bloom Add spices with a 30ml splash of stock; the hiss will release the smoky oils.
  4. The Silk Merge Add remaining stock and cream; simmer until it reduces to a thick nutty silk.
  5. The Marriage Return chicken for 1 minute to lacquer in the sauce.
  6. The Final Flourish Top with extra raw walnuts and fresh parsley.
