THE WALNUT-CHARRED BIRD
(Our Play on Bulgarian Walnut Chicken)
Ingredients: 4 Chicken breasts (pounded thin), 150g Walnuts (finely ground), 2 cloves Garlic (minced), 1 tsp Smoked paprika, 1 tsp White pepper, 1 tsp Salt, 100ml Chicken stock, 50ml Double cream, 50g Butter...

- 150g Walnuts (finely ground)
- 2 cloves Garlic (minced)
- 1 tsp Smoked paprika
- 1 tsp White pepper
- 1 tsp Salt
- 100ml Chicken stock
- 50ml Double cream
- 50g Butter
Cooking Method
- The Scorch Fry chicken in butter on high heat until charred and golden; remove.
- The Architect Add garlic and ground walnuts to the pan; fry until nutty and golden.
- The Bloom Add spices with a 30ml splash of stock; the hiss will release the smoky oils.
- The Silk Merge Add remaining stock and cream; simmer until it reduces to a thick nutty silk.
- The Marriage Return chicken for 1 minute to lacquer in the sauce.
- The Final Flourish Top with extra raw walnuts and fresh parsley.
