THE VINEGAR-LACQUER STEAK
(Our Play on Prego / Portuguese Steak Sandwich)

- 2 Thin sirloin steaks
- 4 cloves Garlic (minced)
- 50g Butter
- 1 tsp Black pepper
- 1 tsp Smoked paprika
- 1 tsp Salt
- 2 tbsp White wine vinegar
- 1 tbsp Mustard
Cooking Method
- The Scorch Sear steaks in a hot pan for 1 minute per side until charred; remove.
- The Architect Melt butter in the same pan and sauté garlic until golden.
- The Bloom Add spices and mustard with a 20ml splash of vinegar; the steam will release the meat sugars and piquant oils.
- The Marriage Return the steaks; toss for 30 seconds until lacquered in a thick red-yellow silk.
- The Final Flourish Serve in a raw soft roll with extra raw mustard and fresh parsley.
