THE VINEGAR-LACQUER STEAK

Ingredients: 2 Thin sirloin steaks, 4 cloves Garlic (minced), 50g Butter, 1 tsp Black pepper, 1 tsp Smoked paprika, 1 tsp Salt, 2 tbsp White wine vinegar, 1 tbsp Mustard...

Ingredients

  • 2 Thin sirloin steaks
  • 4 cloves Garlic (minced)
  • 50g Butter
  • 1 tsp Black pepper
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 2 tbsp White wine vinegar
  • 1 tbsp Mustard

Cooking Method

  1. The Scorch Sear steaks in a hot pan for 1 minute per side until charred; remove.
  2. The Architect Melt butter in the same pan and sauté garlic until golden.
  3. The Bloom Add spices and mustard with a 20ml splash of vinegar; the steam will release the meat sugars and piquant oils.
  4. The Marriage Return the steaks; toss for 30 seconds until lacquered in a thick red-yellow silk.
  5. The Final Flourish Serve in a raw soft roll with extra raw mustard and fresh parsley.
