THE VINEGAR-FIRE REEF-TANGLE
(Our Play on Spanish Spicy Prawn Pasta)

Ingredients
- 400g King prawns
- 400g Tomato passata
- 2 tsp Smoked paprika
- 2 cloves Garlic (sliced)
- 1 tbsp Sherry vinegar
- 1 tsp Dried Basil
- 1 tsp Salt
Cooking Method
- The Scorch Sear prawns in oil for 2 minutes until pink; remove.
- The Architect Sauté garlic in olive oil until golden.
- The Bloom Add paprika and basil with a 30ml splash of water to create a smoky red steam.
- The Swell Pour in passata and vinegar; simmer for 10 minutes then toss with pasta and prawns.
- The Final Flourish Garnish with fresh raw parsley and a drizzle of raw olive oil.
