THE VINEGAR-FIRE REEF
(Our Play on Spicy Spanish Prawns)

Ingredients
- 400g King prawns
- 2 tsp Chili flakes
- 1 tsp Smoked paprika
- 3 cloves Garlic (minced)
- 1 small red onion (minced)
- 2 tbsp Sherry vinegar
- 1 tbsp Honey
- 50g Butter
Cooking Method
- The Scorch Sear prawns in a white-hot pan for 1 minute per side until charred; remove.
- The Architect Sauté onions and garlic in butter until sweet and golden.
- The Bloom Add spices and vinegar with a tiny 15ml splash of water to release the fiery oils.
- The Marriage Add honey; return prawns and toss for 1 minute until they are lacquered in the red silk.
- The Final Flourish Finish with raw lemon zest and fresh coriander matchsticks.
