THE VINEGAR-FIRE REEF
(Our Play on Spicy Shrimp Fra Diavolo)

- 400g King prawns
- 2 tsp Chili flakes
- 3 cloves Garlic (sliced)
- 400g Tomato passata
- 1 tbsp Balsamic vinegar
- 1 Red onion (finely diced)
Cooking Method
- The Scorch Sear prawns in a white-hot pan for 1 minute per side until charred; remove.
- The Architect Sauté onions and garlic until they are a dark, sweet jam.
- The Bloom Add chili flakes and a 30ml splash of water to release the fiery oils.
- The Swell Pour in the passata and vinegar; simmer for 8 minutes until thickened.
- The Marriage Toss the prawns back into the red silk; serve over linguine with fresh basil.
