Ingredients: 2 Red onions (finely diced), 4 cloves Garlic (minced), 1 tsp Dried Oregano, 1 tsp Chili flakes, 1 tsp Sugar, 800g Canned plum tomatoes (crushed), 50ml Olive oil, Handful of fresh Basil, 20g Parmesan (grated)...

Ingredients

  • 2 Red onions (finely diced)
  • 4 cloves Garlic (minced)
  • 1 tsp Dried Oregano
  • 1 tsp Chili flakes
  • 1 tsp Sugar
  • 800g Canned plum tomatoes (crushed)
  • 50ml Olive oil
  • Handful of fresh Basil
  • 20g Parmesan (grated)

Cooking Method

  1. The Foundation Heat olive oil and sauté onions until they are deep golden and sweet to build the sauce architecture.
  2. The Bloom Add garlic, oregano, and chili flakes with a 30ml splash of water to bloom the dried herbs without burning the garlic.
  3. The Swell Pour in the tomatoes and sugar; simmer for 15 minutes until the sauce thickens and the oil begins to separate.
  4. The Marriage Toss with your favorite pasta; ensure every strand is coated in the red silk.
  5. The Final Flourish Tear fresh basil over the top and add a hit of raw parmesan.
