THE VELVET PEPPER-BEEF
(Our Play on Mongolian Beef)
Ingredients: 400g Beef sirloin (thin strips), 3 tbsp Cornflour, 100ml Soy sauce, 2 tbsp Brown sugar, 1 tbsp Ginger paste, 4 Spring onions (cut into batons)...
Ingredients
- 400g Beef sirloin (thin strips)
- 3 tbsp Cornflour
- 100ml Soy sauce
- 2 tbsp Brown sugar
- 1 tbsp Ginger paste
- 4 Spring onions (cut into batons)
Cooking Method
- The Coat Toss beef in cornflour until every strand is coated white.
- The Scorch Fry beef in hot oil on high heat until the edges are crispy and dark; remove.
- The Bloom Add soy, sugar, and ginger to the pan with a 30ml splash of water; boil until syrupy.
- The Marriage Toss the crispy beef and spring onion batons into the syrup for 1 minute until lacquered.
- The Final Flourish Garnish with fresh red chili slices.
