THE VELVET PEPPER-BEEF

Ingredients: 400g Beef sirloin (thin strips), 3 tbsp Cornflour, 100ml Soy sauce, 2 tbsp Brown sugar, 1 tbsp Ginger paste, 4 Spring onions (cut into batons)...

Ingredients

  • 400g Beef sirloin (thin strips)
  • 3 tbsp Cornflour
  • 100ml Soy sauce
  • 2 tbsp Brown sugar
  • 1 tbsp Ginger paste
  • 4 Spring onions (cut into batons)

Cooking Method

  1. The Coat Toss beef in cornflour until every strand is coated white.
  2. The Scorch Fry beef in hot oil on high heat until the edges are crispy and dark; remove.
  3. The Bloom Add soy, sugar, and ginger to the pan with a 30ml splash of water; boil until syrupy.
  4. The Marriage Toss the crispy beef and spring onion batons into the syrup for 1 minute until lacquered.
  5. The Final Flourish Garnish with fresh red chili slices.
