THE VELVET EARTH-BOWL
(Our Play on Mushroom Matar)
Ingredients: 400g Mushrooms (halved), 150g Frozen peas, 1 Large onion (finely diced), 1 tbsp Ginger-garlic paste, 1 tsp Turmeric, 1 tsp Cumin powder, 1 tsp Garam masala, 100ml Double cream, 1 tbsp Tomato purée...
Ingredients
- 400g Mushrooms (halved)
- 150g Frozen peas
- 1 Large onion (finely diced)
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric
- 1 tsp Cumin powder
- 1 tsp Garam masala
- 100ml Double cream
- 1 tbsp Tomato purée
Cooking Method
- The Scorch Fry mushrooms in a dry pan on high heat until they release their water and turn golden brown; set aside.
- The Architect Sauté onions until they reach a deep golden brown to provide the sweet foundation.
- The Bloom Add spices, tomato purée, and a 30ml splash of water to form a fragrant, bubbling paste.
- The Marriage Toss the mushrooms and peas into the paste; stir in the cream on low heat.
- The Final Flourish Garnish with fresh coriander and a hit of black pepper.
