THE VANILLA-SILK CLOUD
(Our Play on Classic Crème Patissière)
Ingredients: 500ml Whole milk, 4 Egg yolks, 100g Sugar, 1 Vanilla pod (seeds scraped), 1 tsp Nutmeg, 40g Cornflour, 50g Butter...

- 500ml Whole milk
- 4 Egg yolks
- 100g Sugar
- 1 Vanilla pod (seeds scraped)
- 1 tsp Nutmeg
- 40g Cornflour
- 50g Butter
Cooking Method
- The Swell Heat milk with the vanilla pod until simmering.
- The Bloom Whisk yolks, sugar, and cornflour with the nutmeg and a 10ml splash of the hot milk; the heat will bloom the spice.
- The Silk Merge Whisk the remaining hot milk into the eggs; return to heat and whisk until it forms a thick, heavy cloud.
- The Marriage Whisk in butter off the heat for extra gloss.
- The Final Flourish Dust with raw cinnamon and serve with fresh berries.
