- 1 can Condensed milk
- 1 can Evaporated milk
- 100g Sugar (for caramel)
- 1 tsp Cinnamon
- 1 tsp Vanilla extract
- Pinch of Salt
Cooking Method
- The Scorch Melt sugar in a pan until it turns a dark, charred amber; pour into a baking mold instantly.
- The Bloom Whisk spices and vanilla with a tiny 15ml splash of warm milk to release the aromatics.
- The Swell Whisk eggs and both milks into the spiced mixture until a uniform silk forms.
- The Bake Pour over the caramel; bake in a water bath at 160°C for 45 minutes until set.
- The Final Flourish Chill for 4 hours; invert and serve with fresh raw orange zest.
