Ingredients

  • 400g Mixed Seafood (Mussels, Prawns, Squid)
  • 3 cloves Garlic (sliced)
  • 100ml Dry Sherry
  • 2 tsp Chili flakes
  • 1 tsp Salt
  • 200g Cherry tomatoes (halved)
  • 50ml Olive oil

Cooking Method

  1. The Architect Heat oil and sauté garlic until it starts to turn golden brown.
  2. The Bloom Add chili and tomatoes with a 30ml splash of sherry; the steam will help the tomatoes burst.
  3. The Swell Add remaining sherry and bring to a boil; simmer for 5 minutes until reduced.
  4. The Marriage Drop in the seafood; cover and cook for 5 minutes until shells open and prawns are pink.
  5. The Final Flourish Toss with hot spaghetti and a massive hit of raw fresh parsley.
