Ingredients
- 300g Mixed Seafood (Fish, Prawns, Mussels)
- 400g Tomato passata
- 200ml Veg stock
- 100ml White wine
- 1 Onion (diced)
- 1 Fennel bulb (shredded)
- 1 tsp Chili flakes
- 1 tsp Dried basil
Cooking Method
- The Architect Sauté onion and fennel in oil until soft and sweet.
- The Bloom Add chili and dried basil with a 30ml splash of stock; fry for 2 minutes to release the perfume.
- The Swell Pour in wine, passata, and remaining stock; simmer for 10 minutes.
- The Marriage Drop in the seafood; cover and cook for 5 minutes until mussels open and fish is opaque.
- The Final Flourish Top with raw fennel fronds and a hit of fresh lemon.
