THE UMAMI DIRT-GRAINS
(Our Play on Shortcut Arroz de Cabidela style Rice)
Ingredients: 200g Chicken livers (finely minced), 4 Chicken thighs (chunks), 300g Carolino rice, 1 tsp Black pepper, 1 tsp Salt, 2 Bay leaves, 2 tbsp Red wine vinegar, 100ml Red wine, 800ml Chicken stock...
Ingredients
- 200g Chicken livers (finely minced)
- 4 Chicken thighs (chunks)
- 300g Carolino rice
- 1 tsp Black pepper
- 1 tsp Salt
- 2 Bay leaves
- 2 tbsp Red wine vinegar
- 100ml Red wine
- 800ml Chicken stock
Cooking Method
- The Scorch Fry chicken chunks until charred; remove. Fry minced livers until they melt into a dark foundation.
- The Bloom Add spices and bay leaves with a 30ml splash of stock; the steam will release the iron-rich aromatics.
- The Swell Add rice, wine, and remaining stock; return chicken. Simmer covered for 15 minutes.
- The Marriage Stir in the vinegar at the end; it will sharpen the dark umami silk.
- The Final Flourish Top with a massive hit of raw fresh parsley and extra black pepper.
