THE UMAMI DARK-GRAINS
(Our Play on Indonesian Nasi Goreng)
Ingredients: 300g Jasmine rice (cold, cooked), 100g Chicken strips, 1 Egg (fried separately), 2 tbsp Kecap Manis (Sweet soy sauce), 1 tbsp Shrimp paste or Soy sauce, 1 Red onion (diced), 2 Green chilies...
Ingredients
- 300g Jasmine rice (cold, cooked)
- 100g Chicken strips
- 1 Egg (fried separately)
- 2 tbsp Kecap Manis (Sweet soy sauce)
- 1 tbsp Shrimp paste or Soy sauce
- 1 Red onion (diced)
- 2 Green chilies
Cooking Method
- The Scorch Fry onions and chicken in oil until charred; add the chilies.
- The Marriage Add the rice; stir-fry on max heat for 4 minutes until toasted.
- The Bloom Add the dark silk ingredients with a 20ml splash of water to help the sugars coat every grain.
- The Finish Top with a crispy fried egg and fresh cucumber slices.
