Ingredients
- 4 Hard-boiled eggs (halved)
- 2 Red onions (finely sliced)
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric
- 1 tsp Black pepper
- 1 tsp Chili powder
Cooking Method
- The Scorch Sear the egg halves in oil with a pinch of turmeric until bubbly and golden.
- The Architect In a fresh pan, sauté onions until dark caramel brown.
- The Bloom Add spices and a 20ml splash of water to form a dark, peppery masala.
- The Marriage Toss the eggs back in; stir gently until every half is crusted in the onions.
- The Final Flourish Finish with fresh curry leaves and a squeeze of lime.
