THE TURMERIC REEF-MIST
(Our Play on Balkan Fish Chowder with an Indian Sting)
Ingredients: 500g Firm Fish (Hake or Monkfish), 2 Red onions (pureed), 20g Ginger (minced), 1 bunch Spring onions, 1 tsp Turmeric, 1 tsp Black pepper, 1 tsp Cumin, 1L Fish stock, 200ml Double cream, 1 Lemon (juiced)...
Ingredients
- 500g Firm Fish (Hake or Monkfish)
- 2 Red onions (pureed)
- 20g Ginger (minced)
- 1 bunch Spring onions
- 1 tsp Turmeric
- 1 tsp Black pepper
- 1 tsp Cumin
- 1L Fish stock
- 200ml Double cream
- 1 Lemon (juiced)
Cooking Method
- The Architect Fry onion and ginger in oil until sweet.
- The Bloom Add fish chunks and spices with a 30ml splash of stock; the heat will release the golden oils.
- The Swell Add remaining stock; simmer for 15 minutes.
- The Silk Merge Stir in cream and lemon juice off the heat until it forms a thick, vibrant yellow silk.
- The Final Flourish Top with raw fresh coriander matchsticks.
