Ingredients: 2 Beef sirloin steaks, 100g Blue cheese (Roquefort), 50ml Double cream, 1 tsp Black pepper, 0.5 tsp Nutmeg, 1 tbsp Truffle oil, Fresh Chives...

Ingredients

  • 2 Beef sirloin steaks
  • 100g Blue cheese (Roquefort)
  • 50ml Double cream
  • 1 tsp Black pepper
  • 0.5 tsp Nutmeg
  • 1 tbsp Truffle oil
  • Fresh Chives

Cooking Method

  1. The Scorch Sear steaks in a white-hot pan for 3 minutes per side until charred; remove.
  2. The Bloom Add the spices to the hot meat fat with a tiny 15ml splash of brandy or water; the steam will release the woody nutmeg oils.
  3. The Silk Merge Lower heat; whisk in the cream and blue cheese until it melts into a thick, pungent silk.
  4. The Marriage Return the steaks for 30 seconds to lacquer in the cheese-silk.
  5. The Final Flourish Drizzle with raw truffle oil and top with fresh chive matchsticks.
