THE TRUFFLE-CHEESE SLABS
(Our Play on Steak with Roquefort & Truffle)
Ingredients: 2 Beef sirloin steaks, 100g Blue cheese (Roquefort), 50ml Double cream, 1 tsp Black pepper, 0.5 tsp Nutmeg, 1 tbsp Truffle oil, Fresh Chives...
Ingredients
- 2 Beef sirloin steaks
- 100g Blue cheese (Roquefort)
- 50ml Double cream
- 1 tsp Black pepper
- 0.5 tsp Nutmeg
- 1 tbsp Truffle oil
- Fresh Chives
Cooking Method
- The Scorch Sear steaks in a white-hot pan for 3 minutes per side until charred; remove.
- The Bloom Add the spices to the hot meat fat with a tiny 15ml splash of brandy or water; the steam will release the woody nutmeg oils.
- The Silk Merge Lower heat; whisk in the cream and blue cheese until it melts into a thick, pungent silk.
- The Marriage Return the steaks for 30 seconds to lacquer in the cheese-silk.
- The Final Flourish Drizzle with raw truffle oil and top with fresh chive matchsticks.
