THE TROPICAL PEARL-YOGURT
(Our Play on Pineapple Pachadi)

- 250g Fresh pineapple (finely diced)
- 200g Greek yogurt
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds
- 1 tsp Turmeric
- 50ml Coconut milk
- 1 tsp Sugar
Cooking Method
- The Scorch Sauté pineapple with turmeric and sugar for 5 minutes until soft.
- The Bloom Add a splash of water to turn the turmeric into a fragrant yellow oil.
- The Mix Let the pineapple cool slightly, then fold into whisked yogurt and coconut milk.
- The Tarka In a separate pan, sizzle mustard seeds and cumin until they pop.
- The Final Flourish Pour the hot temper over the yogurt and serve cold.
