(Our Play on Black Scabbard Fish with Banana)

Ingredients
- 2 White fish fillets (Snapper or Cod)
- 2 Bananas (halved)
- 50g Flour
- 1 tsp Salt
- 1 tsp White pepper
- 0.5 tsp Ginger powder
- 100ml Passionfruit juice
- 50g Butter
Cooking Method
- The Coat Dredge fish and bananas in flour.
- The Scorch Fry fish in butter on high heat until golden; remove. Fry bananas in the same pan until caramelized and charred.
- The Bloom Add spices and passionfruit juice to the pan with a tiny 15ml splash of water; the steam will release the tropical perfume.
- The Marriage Simmer for 2 minutes until the liquid reduces to a thick yellow lacquer.
- The Final Flourish Drench the fish and fruit in the silk; top with raw fresh parsley.
