Ingredients

  • 2 White fish fillets
  • 3 cloves Garlic (minced)
  • 1 Jalapeño (minced)
  • 1 tsp Cumin
  • 1 tsp Salt
  • 50ml Tequila
  • 2 Limes (juiced)
  • 50g Butter

Cooking Method

  1. The Scorch Sear fish in 1 tbsp oil for 3 minutes per side until charred; remove.
  2. The Architect Melt butter and sauté garlic and jalapeño until golden.
  3. The Bloom Add tequila, lime juice, and cumin; boil for 2 minutes until the raw alcohol evaporates.
  4. The Marriage Whisk until the liquid reduces to a thick zesty silk; pour over the fish.
  5. The Final Flourish Top with raw lime zest and fresh raw mint matchsticks.
