THE TANGY LENTIL-RAIN
(Our Play on Sambar / South Indian Lentil Stew)
Ingredients: 150g Toor dal (boiled and mashed), 1 Carrot (batons), 100g Drumsticks (Moringa) or Green beans, 2 tbsp Tamarind paste, 1 tsp Sugar, 1 tsp Turmeric, 2 tsp Sambar powder, 1 tsp Mustard seeds...
Ingredients
- 150g Toor dal (boiled and mashed)
- 1 Carrot (batons)
- 100g Drumsticks (Moringa) or Green beans
- 2 tbsp Tamarind paste
- 1 tsp Sugar
- 1 tsp Turmeric
- 2 tsp Sambar powder
- 1 tsp Mustard seeds
Cooking Method
- The Boil Boil veg in tamarind water until tender.
- The Bloom Add sambar powder and a 30ml splash of water to form a fragrant base.
- The Marriage Stir in the mashed lentils; simmer for 10 minutes until the flavors merge into a tangy rain.
- The Tarka In a separate pan, sizzle mustard seeds and curry leaves in oil until they pop.
- The Final Flourish Pour the hot tarka over the stew; finish with fresh coriander.
