THE TAHINI SHOPSKA CRUSH
(Our Play on Shopska with a Levantine Twist)
Ingredients: 3 Tomatoes, 1 Cucumber, 1 Red onion, 2 Green peppers, 1 tsp Sumac, 1 tsp Salt, 2 tbsp Tahini, 1 tbsp Wine vinegar, 2 tbsp Water, 200g Sirene or Feta (grated)...

- 3 Tomatoes
- 1 Cucumber
- 1 Red onion
- 2 Green peppers
- 1 tsp Sumac
- 1 tsp Salt
- 2 tbsp Tahini
- 1 tbsp Wine vinegar
- 2 tbsp Water
- 200g Sirene or Feta (grated)
Cooking Method
- The Architect Dice all vegetables; combine in a bowl.
- The Bloom Whisk tahini, vinegar, water, and sumac; add a tiny 5ml splash of warm water to loosen the silk.
- The Marriage Toss the veg in the nutty tahini silk; cover the top with a mountain of grated cheese.
- The Final Flourish Top with raw fresh parsley matchsticks and toasted sesame seeds.
