THE SYRUP-STEEPED CLOUD
(Our Play on Greek Revani / Semolina Cake)
Ingredients: 150g Semolina, 100g Flour, 150g Sugar, 4 Eggs, 1 tsp Cardamom, 1 tsp Vanilla extract, 1 Lemon (zested), 200ml Water, 200g Sugar, 2 tbsp Honey...

Cooking Method
- The Bloom Whisk eggs and sugar until pale; add vanilla and zest with a tiny 5ml splash of warm milk to release the citrus oils.
- The Build Fold in semolina, flour, and cardamom; bake at 180°C for 30 minutes until golden.
- The Swell Boil water, sugar, and honey for 5 minutes into a syrup.
- The Marriage Pour the hot syrup over the cold cake; the semolina will swell into a dense sweet silk.
- The Final Flourish Top with raw desiccated coconut or crushed pistachios.
