- 400g Tomato passata
- 1 tbsp Chipotle in Adobo
- 1 tsp Cumin
- 1 Red onion (diced)
- 2 cloves Garlic
- 4 Eggs
- 4 Corn tortillas
- Fresh Avocado
- Coriander
Cooking Method
- The Architect Sauté onion and garlic until soft and golden.
- The Bloom Add chipotle and cumin with a 30ml splash of water to release the smoky oils.
- The Swell Add passata; simmer for 10 minutes until thick. Fry eggs separately in oil.
- The Marriage Char tortillas over a flame; place egg on tortilla and drown in the fire-silk.
- The Final Flourish Top with fresh avocado and raw coriander matchsticks.
