THE SUN-STEEPED RED RICE
(Our Play on Sun-dried Tomato Rice / Arroz con Tomate)

Ingredients
- 300g Bomba or Arborio rice
- 100g Sun-dried tomatoes (blitzed to a paste)
- 1L Veg stock
- 2 Red onions (finely diced)
- 4 cloves Garlic
- 1 tsp Dried Basil
- 1 tsp Smoked paprika
Cooking Method
- The Architect Sauté onions and garlic in olive oil until soft and sweet.
- The Scorch Add the rice; toast for 2 minutes until the edges are see-through.
- The Bloom Add the tomato paste and spices with a 50ml splash of stock; stir until the rice is stained deep red.
- The Swell Add stock one ladle at a time, stirring until the grains are creamy but firm.
- The Final Flourish Stir in a massive hit of raw goat's cheese and fresh basil right before serving.
