THE SUMAC REEF-TANGLE
(Our Play on Turkish Style Prawns)

- 1 tbsp Sumac
- 1 tsp Chili flakes
- 1 tsp Dried Mint
- 50g Butter
- 1 tbsp Pomegranate molasses
- 2 cloves Garlic (minced)
Cooking Method
- The Scorch Sear prawns on high heat for 2 minutes until pink and charred; remove.
- The Architect Melt butter and sauté garlic until fragrant.
- The Bloom Add sumac, chili, and mint with a tiny 15ml splash of water; the sizzle will bloom the tart sumac oils.
- The Marriage Stir in pomegranate molasses; return prawns and toss until lacquered in the purple silk.
- The Final Flourish Top with raw fresh parsley and extra lemon zest.
