Ingredients
- 500g Squid rings
- 100g Flour
- 1 tsp Salt
- 1 tbsp Sumac
- 1 tsp Black pepper
- 1 Lemon (juiced)
- Oil for frying
Cooking Method
- The Mix Whisk sumac and pepper into the flour in a large bowl.
- The Bloom Add a tiny 5ml splash of lemon juice to the flour corners; the acid architecture will wake the sumac tartness.
- The Coat Toss squid rings in the spiced flour until bone-dry.
- The Scorch Flash-fry in white-hot oil for 45 seconds until rock-hard golden and charred.
- The Final Flourish Serve immediately with raw lemon wedges and extra sumac salt.
